THE MOTHERS AT HILLCREST POULTRY
By Amanda Surkont
They worked the lines
hair in nets
rubber boots stuffed
into plastic bags secured
with fat rubber bands
so chicken blood would not soak
their aching feet – cold -- hurting
from standing fourteen hours
on wet cement floors.
They pulled knots and fat
and sliced out the diseased flesh
from the chickens that would go
to supermarket box processors,
they peeked into the kill room,
watched the menfolk wading in blood
up to their knees as they plucked feathers
from the limp carcasses, trying
to estimate how long the day would be,
wondering if they’ll play
with the children before dark.
